There’s a lot of inspiration and content out there on the internet, and I feel pulled in different directions to try new things, but also stick with what I know is safe and well-liked. I wanted to share some recipes that have caught my eye lately that would make great GF family meals, as well as a few special treats. At the bottom, I include our favorite dinner lately that is (almost!) always a hit, and my favorite new GF snack hack.

looks like a great starting point.If there’s anything easier than Instant Pot or grilling, it’s a sheet pan dinner. I am very interested in trying this Sheet Pan Honey Mustard Chicken from Taste of Home.
I’ve been seeing buckwheat everywhere lately, and I am definitely going to try these Buckwheat Pancakes from Love and Lemons. We do pre-mix pancakes every Sunday morning so, it’s time to switch it up!
I’ve been relying a lot on boxed baked goodies, but my goal this spring and summer is to ace a go-to birthday cake recipe. I have heard such great things about GF Jules, and I am looking forward to making her birthday cake.
Speaking of sweets, I think having a GF flourless chocolate cake is kind of a prerequisite for our household now. This NYT one looks delish.
My daughter loves noodles, and this Potsticker Noodle Bowl from Iowa Girl Eats looks SO flavorful and only takes 30 minutes!
This amazing looking instant pot Salsa Chicken from What Molly Made is definitely going into my weekly rotation. Only a handful of ingredients, and can be used for tacos, bowls or salads.

We’re really into GF oats at home, and I’m thinking of giving overnight oats a try. I'm liking the recipe from Meaningful Eats because it gives you four different flavor profiles to choose from!

What I’m Loving
Wholesalers! We joined a local wholesaler and it helps with the endless purchasing of pricey GF snacks. I also use Thrive Market for this, but when I don’t want to wait on a delivery, this is my new go-to. We eat a lot of quinoa as well, and I can get a 3 lb. bag for under $10, which I love. I’m looking forward to finding even more GF treasures next time I go.
New Favorite Meal
Hard Shell Black Bean Tacos! (Pictured above). Despite my - ahem - Instagram rant about how this was rejected, it does remain one of my daughter’s top choices lately, *granted* I have the correct brand of hard shell. Oh the joy of toddlers :)
It’s a VERY easy weeknight meal. While you can add whatever you want, I find it easiest to throw black beans, seasoning, rice & cheese in a shell and warm it in the oven for a few minutes. Serve with sliced avocado and fruit and you’re done! My favorite shell brands are Garden of Eatin (which comes with a taco seasoning packet inside) and Siete (with a delicious GF seasoning sold separately.)
