If there’s one thing my kids (one GF one non-GF) agree on lately, it’s meatballs. It is always a crowd pleaser. I like that they can be as simple or as rich and flavorful as you care to make them. Sometimes I literally make them with 3 ingredients (meat, tomato sauce, cheese), and other times I like to use a bit more creativity. I aimed for a marriage of these two concepts in this recipe - high flavor with minimal work and ingredients to get dinner on the table stat. We love meatloaf in this house, and I wanted to bring some of that flavor to these meatballs with the inclusion of ketchup and garlic powder. Serve as traditional spaghetti and meatballs, solo, or with anything your heart desires!
Ingredients
1 lbs ground chicken or turkey
1/4 cup GF breadcrumbs (seasoned if you want a kick of flavor)
1/2 cup GF tomato sauce
1/2 cup grated parm
2 Tablespoons ketchup
1 teaspoon favorite dried herb, such as parsley, oregano or Italian seasoning
1 teaspoon garlic powder
Salt/Pepper
Directions
Preheat oven to 350. Mix all ingredients together in a large mixing bowl and spoon 2 inch meatballs on to a sheet pan. Bake for 20 minutes (internal temp should be 165).
*If you plan to make spaghetti and meatballs, put the uncooked meatballs in a roaster or sauce pan to bake. This will allow you to cover with tomato sauce and simmer once the meatballs are baked.
*You can omit the cheese to make this both dairy and egg free!
