Easter is right around the corner and with that, I want to share some simple, GF, make-ahead dishes you can serve. My go-to for almost any holiday is strata. Since we are hosting Easter brunch, I will definitely be serving a strata as my main dish. I’ll include my original recipe for The Anytime Strata below, as well as two other GF strata recipes that caught my eye. I will assemble this the day before, so all I’m doing on Easter is popping it in the oven (more time for the egg hunt!) I’m going to make a chopped fruit salad the day before as well, a simple green salad with lemon dressing, and last but not least, a GF Bunny Cake (above). If I have time, I’ll make some GF biscuits too. I’ll be sure to include links to all these recipes as they are easy, delicious, and of course, Gluten Free!
The Anytime Strata
Preheat oven to 350 degrees
1 Onion, diced
1 Bell pepper, diced
Chopped herbs of your choice, such as parsley, thyme, or oregano
6 Eggs whisked
1.25 Cups whole milk
1 Tablespoon maple syrup
3/4 Cup shredded cheese, set some aside to sprinkle at the end
Half a bag of Oreida GF tater tots (already cooked)
Salt and pepper to taste
In a mixing bowl, whisk the 6 eggs and add the 1.25 Cups milk. Add in salt, pepper, 1/2 cup of shredded cheese and chopped herbs. Pour into a greased 6x10 or similar sized roasting pan. Bake for 50 minutes. Top with remaining 1/4 cup shredded cheese and bake for 10 more minutes. If you’d like, you can add a cooked meat, or bulk up the veggies with some sauteed spinach or cooked mushrooms.
*This recipe can easily be doubled to feed a larger crowd!
Fruit Salad
2 Oranges
Purple grapes, sliced
1 box strawberries
1 box blueberries
Chopped pineapple
1 Lemon, juiced
1 Tablespoon honey
1/4 cup mint
Chop the fruit and set aside. In a small bowl whisk the lemon, honey and mint then drizzle over the fruit. Toss and serve.
Greens Salad with Lemon Vinaigrette
1 head fresh lettuce, chopped and washed
1/4 cup fresh lemon juice
1/4 teaspoon sea salt
1/4-1/3 cup olive oil
pepper to taste
*for added texture, you can add any veggies you want - like carrot, cucumber, tomato - or some GF croutons.
Whisk lemon juice, salt, pepper and olive oil and toss on greens. Serve immediately.
Bunny Cake
We plan to use GF King Arthur Yellow Cake Mix and Betty Crocker Whipped Vanilla Icing and Decorations - all GF. Additionally, we’re using Starburst Jelly Bellys which are GF. If you are looking for something more adventurous, these recipes look great!
