One of my favorite ever dishes is Chicken Pot Pie. Despite my desire to only make ONE meal, and do everything in a slow cooker/instant pot/one pot format that…hasn’t been the case so far this school year #sos
I realized these flavors and textures will please everyone, even if some deconstruction is required, and I can do it all in one pot! I made this with the traditional egg dough, which does take some extra time. If you wanted, you could eliminate this step and add GF noodles, rice, or even a GF biscuit to round out your meal while saving some time. Overall, this meal takes about 45 minutes to prep, then it’s hands off while it’s on the stove top for another 30 min.
There are so many great iterations of this dish I wanted to share as well. My long-time favorite is Martha Stewart’s classic chicken pot pie. I love this recipe for a special holiday meal. If you want to be super hands off, here’s a GF slow cooker version from Fearless Dining. My recipe is one I’ve enjoyed my whole life, and was able to make GF with a simple tweak. I hope you enjoy!
Pennsylvania Dutch Chicken Pot Pie
Dough
2 cups GF flour
2 eggs
1/2 tsp salt
pepper
1/2 cup water (and an addition 1 Tablespoon at a time, if needed)
Mix all ingredients in a bowl and mix until combined and dough is well hydrated. Throw some GF flour on your working surface and be sure to put some flour on top of the dough and the rolling pin as well. Once its about 1/4 inch thick, cut into squares. You can just use a knife for this, however I used a pie cutter. Set aside for now.
Pot Pie
1 cup parsley, chopped
2 shredded cooked chicken breasts, or one shredded rotisserie chicken
10 cups of chicken broth (2.5 cartons)
4 yellow potatoes, or 2 large baking potatoes, peeled and sliced thin
Salt and pepper to taste
Add the shredded chicken and broth to a stock pot and bring to a boil. At that point, add the potatoes and dough, lower the heat and cook for 30 minutes. At the 30 minute mark, taste for salt and pepper, and add the parsley. I love that despite to simplicity of this recipe, the meal turns out flavorful, hearty and comforting. Simmer a few more minutes, and serve!
