This was the very first gluten free recipe I developed for a yummy breakfast or snack, and it has been a big hit in our house ever since. As a time saver, I’m very into serving my kids a “continental breakfast” (a GF pastry or bread, yogurt and some fruit). Easy peasy!
Preheat oven to 350 degrees
Grease a loaf pan. I use olive oil or avocado oil spray - or you can use butter.
In one large bowl mix together:
1 Cup sugar
1 Stick butter
*First cream the butter and sugar together*
Then add:
2 Eggs
2 Mashed ripe bananas
1 Teaspoon vanilla
1/4 Cup applesauce
Mix gently
1.5 Cups GF flour (I love Bobs Red Mill or King Arthur)
1 Teaspoon baking soda
1 Teaspoon kosher salt
Once fully mixed, fold in 1/2 Cup GF chocolate chips (I use Enjoy Life)
Transfer to the baking pan and pop in the oven. Begin checking for doneness at 50 minutes (it can sometimes take up to an hour depending on how hot your oven is). Once a knife or toothpick comes out clean, cool fully, slice and dig in!
