Through some research and conversations with those on the ground, I’ve learned the best way to be impactful to GF and Allergy families in LA is to donate to Securing Safe Food!
Securing Safe Food is a national nonprofit that fights food insecurity on behalf of those with celiac or food allergies, and to improve access to GF/allergen-free food. They partner with local food pantries committed to their mission to distribute safe foods, free of charge.
As some of you may have seen on the GFKC instagram page, we’ve been fundraising for Securing Safe Food. This is a long game, because while many people are displaced and need food ASAP, there will also be a need to keep food pantries stocked with GF goods well into the spring (and beyond!) Every dollar donated goes to purchasing shelf stable GF and allergen-free goods that are then distributed to these pantries.
If you wish to support those in LA who are worried about where their next GF meal or grocery haul will come from, join us in donating to Securing Safe Food.
What we’re eating: Honestly, meals have not been too inventive or complicated lately, as we’ve entered a bit of a picky phase. Favorites continue to include black bean and cheese tacos, cheese sticks and yogurt, GF oatmeal, and GF pizza, with the occasional side of avocado or apple. We always work to expand interest in new recipes and foods but lately in the doldrums of winter, it has been easier to lean into the simple favorites, and I’m not beating myself up about it.
What we’ll have next: I’m determined to make an updated pot roast with tons of flavor and a superfood or two. In addition to leaning into kiddo favorites, I’ve been making big pots of soup that can last the adults for days (chicken veggie rice, minestrone, chili with GF cornbread). Stay tuned for the pot roast 2.0 coming soon!
Favorite new tip: Recently we went away for a weekend and I wasn’t terribly familiar with the local GF food scene. We identified a restaurant or two that we felt comfortable with, plus we had a kitchen so I wasn’t too worried. But I packed Schar GF burger and hot dog buns which will now be my new go-to. Every restaurant can make a burger, but they don’t always have a GF bun. (One place we went actually had GF buns, but they happened to be out that night). Having these handy is a game changer for rounding out a meal on the go.
This time last year: I was deep in an enchilada phase. If you want to make this delicious family meal, try the GFKC Enchiladas!
