One recipe I’ve been wanting to make for a while is Sloppy Joes! Every time I cook, I’m looking to make things quicker, easier and tastier - and this definitely fits the bill. I decided to add somewhat-hidden veggies to bulk up the fiber, and utilize fresh summer produce to create this happy GF family meal. Chefs kiss!
Ingredients
1 small onion (or half a large), small dice
1 zucchini, small dice
1 summer squash, small dice and excess seeds cut out
3 Tablespoons tomato paste
2 Tablespoons ketchup
1 lbs ground beef
1 teaspoon kosher salt
1/2 Tablespoon paprika
1 Tablespoon garlic powder
2 Tablespoons olive oil
Pepper or chili powder, optional
Instructions
Once you’ve diced your veggies, pour about 2 Tablespoons olive oil in a large pot and start to saute the onion, zucchini and squash. Once the veggies have cooked down, about 10 minutes, add 3 Tablespoons tomato paste and fully combine. This may take a moment to work the paste completely into the veggie mix.
Add 1 lbs beef and break up continuously. Add 1 Tablespoon garlic powder, 1 teaspoon kosher salt, and 1/2 Tablespoon paprika and fully mix. If you or your kids like heat, feel free to add some pepper, or chili powder to the mix! Continue to break up the meat and incorporate the veggie/spice/meat mixture until the beef begins to brown, about 10 more minutes. At this point, add 2 Tablespoons of ketchup and stir.
Toast up some GF buns, spoon the Sloppy Joe mixture on to the bun, serve with chips or fries, and ENJOY!
