One of my favorite dishes, any time of day, is the oh-so-versatile strata. For kids who love eggs, there are a million ways to change this up and make it feel like a brand new meal. I find it well received at breakfast or dinner - really any time! I made this one especially kid-friendly with the inclusion of tater tots and plenty of shredded cheese. Breakfast sausage, GF bread cubes and herbs would all be welcome additions to make it your own. I also love a strata to feed a crowd for breakfast over the holidays, or when hosting visitors.
Preheat oven to 350 degrees
1 Onion, diced
1 Bell pepper, diced
Chopped herbs of your choice, if using
6 Eggs whisked
1.25 Cups whole milk
1 Tablespoon maple syrup
3/4 Cup shredded cheese, set some aside to sprinkle at the end
Half a bag of Oreida GF tater tots (already cooked)
Salt and pepper to taste
Pour in a greased 6x10 or similar sized roasting pan. Top with remaining shredded cheese. Bake for 1 hour. As I mentioned above you can add a cooked meat, or bulk up the veggies with some spinach or cooked mushrooms. The GF possibilities are endless! Enjoy.
