This school year, I only want to make One Pot/Instant Pot/Air Fryer Meals that take 30 minutes. If it dirties my kitchen at the end of the day, or uses too many pans, I’m not doing it! Let’s make our after-school lives easier - not more hectic. Who’s with me! In this meal plan, I’ve included my favorite one-pot dinners that hopefully achieve this quick and easy goal.
This will be our first year packing a lunch, so I’ll be learning as I go what the favorites are, and what keeps best in the lunch box. Below I’ve included ideas for lunches I plan to make, and I’ll share more as we experiment with new ideas/recipes. Lastly, I’ve included our favorite GFKC breakfasts in case you want to be extra prepared and have breakfast on hand (looking at you, baked goods). Enjoy!
Monday
Breakfast: Chocolate Chip Banana Bread
Lunch: Sunbutter and jelly on GF bread with cheese and GF crackers
Dinner: Instant Pot Spaghetti and MeatballsTuesday
Breakfast: GFKC Granola with chopped fruit
Lunch: GF Pasta Salad with hidden protein and veggies (recipe to come..) chopped fruit and crackers
Dinner: One Pot Risotto con CeciWednesday
Breakfast: Double Chocolate Zucchini Bread
Lunch: Cottage cheese, leftover GFKC granola, and chopped fruit
Dinner: One Pot Chicken & Veggie PaellaThursday
Breakfast: Chocolate Chip Cinnamon Scones
Lunch: Hummus and sliced Cucumber on GF bread, sliced apple and crackers
Dinner: One Pot Pasta BakeFriday
Breakfast: Strata Egg Muffins
Lunch: Leftover GF Pizza (my kiddo likes cold pizza!) chopped fruit, and roasted chickpeas
Dinner: Easy Roasted Enchiladas
Alternative SUPER EASY meal ideas - for when you truly just do not want to cook at the end of the day:
Tendies and Tots - I love Applegate Farm Chicken Tenders and the Ore-Idea frozen potato product brand
Frozen GF Pizza and chopped fruit - Banza or Caulipower are favorites
Bean and cheese taco or GF quesadilla - Add a side of avocado and voila
Cheesy Scrambled Eggs and a side of fruit
Your favorite local GF take out spot! Our go-to order is GF fries, grilled cheese and chicken tenders.
