Hi! I just recently joined this substack and appreciate your work SO much. My 5 year old was diagnosed with celiac disease at age 3 and it’s so refreshing to see the work you’re putting in to gather recipes and recommendations. We too just stayed at the JW. I agree their options are great but also point out that their fryers varied- some of the restaurants had dedicated GF fryers and some didn’t which I thought was interesting. Just reiterates the need to verify each time at a resort like this

Yes, the JW was amazing! You're right though, even though there were so many options, some restaurants on-site didn't have the same equipment as others. I came to learn our most GF-friendly options, but yes, always have to speak to the server and make sure they know the seriousness!
